As a person who loves to cook, but who also works a full-time job and needs quick, easy meals, I like cooking things with minimal prep. This recipe came to me while I was watching my middle school class run around outside, and it was just as easy and delicious as I thought it would be. Added bonus: it reheats really well, so I had a great lunch to bring to school!

Healthy(er) Pasta Bake
Ingredients
- 1 box of rigatoni noodles
- Olive oil
- 1 Pound Ground Turkey (or any ground meat)
- Bag of spinach
- Jar of pasta sauce
- 1 cup shredded mozzarella
- 1 cup cottage cheese
Directions
- Preheat oven to 350. Set a 9×13 baking dish to the side.
- Cook the rigatoni in a large pot.
- While rigatoni is cooking, brown turkey in a large pan over medium heat. Put olive oil in the pan first to keep turkey from sticking!
- Add spinach to turkey and cook down. Pour in pasta sauce.
- Strain cooked pasta and pour into baking dish. Pour sauce mixture onto pasta and stir around to ensure all pasta is covered.
- Dollop cottage cheese onto the pasta, and evenly cover with mozzarella.
- Bake for 10-15 minutes, watching to make sure cheese doesn’t burn. Enjoy!
