Healthy(er) Pasta Bake

As a person who loves to cook, but who also works a full-time job and needs quick, easy meals, I like cooking things with minimal prep. This recipe came to me while I was watching my middle school class run around outside, and it was just as easy and delicious as I thought it would be. Added bonus: it reheats really well, so I had a great lunch to bring to school!

Ingredients

  • 1 box of rigatoni noodles
  • Olive oil
  • 1 Pound Ground Turkey (or any ground meat)
  • Bag of spinach
  • Jar of pasta sauce
  • 1 cup shredded mozzarella
  • 1 cup cottage cheese

Directions

  1. Preheat oven to 350. Set a 9×13 baking dish to the side.
  2. Cook the rigatoni in a large pot.
  3. While rigatoni is cooking, brown turkey in a large pan over medium heat. Put olive oil in the pan first to keep turkey from sticking!
  4. Add spinach to turkey and cook down. Pour in pasta sauce.
  5. Strain cooked pasta and pour into baking dish. Pour sauce mixture onto pasta and stir around to ensure all pasta is covered.
  6. Dollop cottage cheese onto the pasta, and evenly cover with mozzarella.
  7. Bake for 10-15 minutes, watching to make sure cheese doesn’t burn. Enjoy!
